one shallot, minced
1 tsp honey
1 tsp mustard
2 tbsp red wine vinegar
salt and pepper

The shallots in this recipe will bring a strong flavor to this vinaigrette, but it is milder than a white, yellow or red onion.  To soften the flavor further, either add more honey or add some mild mustard.
